Assuming it has not been painted red by someone in the past it would prolly be a Lakewood piece. New in Summit they sell for $350. Assuming it has not been modified you could maybe get $200-250 for it. They come new with an SFI sticker on them, not sure if a buyer might expect it to still be present.
No idea on the shifter, depends on what it is as Hurst makes/made many models. If it is a factory shift maybe it might be worth more to someone. My guess would be $50-75 tops.

Do you think a buyer would appreciate being able to "test" drive the trans before buying?
Really depends on the buyer. Some may want to pull the side cover to look inside the trans at the condition of the gears, synchris and sliders before they woudld ever consider buying it and that would be hard to do in the car. I would think that for most to know it just came out of a running car that would be good enough. No idea on the value of an M21. Do some searching on Ebay and RacingJunk.com for some comparables.
