Will 225/60/14 be too wide for my manual steering. I don't want to have to start lifting weights so I can turn this thing. I'm thinkin' of 225/60 front and 235/60 rear.

With a stock ratio manual box, no it won't be a problem.
I had a 67 with that 235 size tires and a fast ratio Z28 manual box years ago. You don't want to parallel park it, but once in motion it was fine.

When I had manual steering I didn't ever want to parallell park. I had changed to a smalller steering wheel and was running stock size E70 14 tires.
